When I became lactose intolerant 3 years ago *sigh* I realized that the worst thing about it was baked goods and just dessert overall. I've gotten used to the whole no cheese thing (once you stop you don't care anymore to be honest) and the almond/soy milk is easy. But, once the cookies and cream puffs start rolling out, especially in the holiday season, I find myself very sad or very sick. So I decided that I needed to find some dank dairy free/vegan dessert recipes that were even better than the ones with 3 sticks of butter and a cup of whole milk because we dairy free/vegan people deserve a good dessert...also half the calories.
So my friends, the best PB cookie in the world has been born.
Seriously, I would bake off with Betty Crocker using this recipe. What I love about it is how simple the ingredients are, how easy it is and how "healthy" you can make it. If you love peanut butter as much as I do, you'll be making these almost every night...trust me.
Makes about 14...I like them to be as big as my head so I'm sure it could make more.
1 cup sugar (healthier substitute: coconut sugar)
1 cup brown sugar
2 cups Peanut Butter (healthier substitute: protein peanut butter like Teddy's)
1 tsp Vanilla
1 tsp Baking Powder
2 eggs (VEGAN OPTION: Use 1/4 cup of unsweetened applesauce in place of one egg.)
* I have also cut this recipe in half very easily.
* I am not vegan so I always use the eggs.
Preheat the oven to 350 Fahrenheit. Combine all the ingredients in a mixing bowl. The consistency will look a lot like peanut butter. It is very sticky so use a spoon to put them on an ungreased cookie sheet in ball form about 3 inches apart.
Use a fork to lightly press down in a cross shape to give that classic peanut butter cookie look.
Pop them in the oven for about 10 minutes. Check on them though, you'll know if they aren't cooked yet. They will be golden brown on the tops when they are done.
